Sweet Cinnamon Oatmeal

Happy Saturday Everyone!!

I have never been much of a breakfast lover!
However, in recent years I have made myself eat it because I know how important it is!!

The trouble I have is finding a breakfast food that is filling and satisfying!!

Do you all have that problem? No, just me?!?

I love oatmeal but I'm not a huge fan of buying the pre-packaged stuff!
So, i searched the internet for some recipes and finally came up with my own version of Cinnamon oatmeal that is sweet, filling & satisfying!


Sweet Cinnamon Oatmeal

1/2 cup quick cooking oats
1/2 cup water
1/2 cup milk {almond, soy, cow, etc.}
1 T light brown sugar or more to taste
1/4 t cinnamon or more to taste
a dash of salt
i've also added a bit of agave 

put all ingredients in a microwave safe dish
microwave for 3 - 3.5 minutes
keep an eye on it to make sure it doesn't bubble over 



This is a simple and quick breakfast for your busy mornings!!

Texas Caviar (My Way)

A co-worker of mine brought this fabulous dish to work one day for lunch.
I fell in love.
This dish is so easy to make and the flavors just burst in your mouth :o)

I tweaked a few things from the original recipe to fit our tastes buds.

Ingredients:

2 cans black-eyed peas, drained
1 can black beans, drained
2 cans of rotel, drained
1 can of niblet corn, drained
2 jalapenos, seeded & minced
1 yellow bell pepper, diced
1 medium sweet onion or a bunch of green onions, diced
4-6 T red wine vinegar
juice of 1/2 - 1 whole lime
4-6 T olive oil
1/2 t salt
1/2 t freshly ground black pepper
1/2 t garlic powder
1 t oregano or more to taste
1 1/2 t cumin or more to taste
1/4 c chopped fresh cilantro

Directions:

In a large bowl, mix all ingredients and stir until well combined.
Refrigerate for at least 2 hours before serving.

Serve with tortilla chips, crackers, fritos scoops!


I honestly, fell in love with this recipe!!
I can't believe I've never heard of it before!!!
I'm about to go scarf down some of it right now :o)

recipe box & recipe cards

a couple of weeks ago i went on a hunt for a recipe box and recipe cards.

why?

well, i was tired of having tons and tons of papers with recipes from the internet or handwritten ones and then never being able to find them again.
so...the 'hunt' began!!

i went to several different stores looking for them...
finally, at HALLMARK, i found what i wanted :o)

for the last week or so i have been writing the recipes down on my new cards and filing them in my box :o)

it's kind of sad how giddy i am about the 'whole' thing!!!

i feel much more organized and neat...especially, after watching HOARDERS last night with my hubby!!

i've pretty much gotten all the recipes down on a card and i'm super thrilled about it!

i'm on the hunt for some good and interesting 'entree salads' for spring and summer...

do you guys have any salad recipes that you love?
if so, please share!!

i found the recipe below from The Pioneer Woman and we are having it this week :o)

Asian Noodle Salad
  • SALAD INGREDIENTS:
  • 1 package Linguine Noodles, Cooked, Rinsed, And Cooled
  • ½ heads Sliced Napa Cabbage, Or More To Taste
  • ½ heads Sliced Purple Cabbage, Or More To Taste
  • ½ bags Baby Spinach, Or More To Taste
  • 1 whole Red Bell Pepper, Sliced Thin
  • 1 whole Yellow Bell Pepper, Sliced Thin
  • 1 whole Orange Bell Pepper, Thinly Sliced
  • 1 bag Bean Sprouts (also Called Mung Bean Sprouts)
  • Chopped Cilantro, Up To 1 Bunch, To Taste
  • 3 whole Scallions, Sliced
  • 3 whole Cucumbers Peeled And Sliced
  • 1 can (about 10 Oz.) Whole Cashews, Lightly Toasted In Skillet

  • FOR THE DRESSING:
  • 1 whole Lime, Juiced
  • 8 Tablespoons Olive Oil
  • 8 Tablespoons Soy Sauce
  • 2 Tablespoons (up To 3 Tablespoons) Sesame Oil
  • ⅓ cups Brown Sugar
  • 3 Tablespoons Fresh Ginger Chopped
  • 2 cloves Garlic Chopped
  • 2 whole Hot Peppers Or Jalapeno's, Chopped
  • Chopped Cilantro
Preparation Instructions

Mix salad ingredients together. Whisk dressing ingredients together and pour over salad. Mix with tongs and serve on a platter.
