Texas Caviar (My Way)

A co-worker of mine brought this fabulous dish to work one day for lunch.
I fell in love.
This dish is so easy to make and the flavors just burst in your mouth :o)

I tweaked a few things from the original recipe to fit our tastes buds.

Ingredients:

2 cans black-eyed peas, drained
1 can black beans, drained
2 cans of rotel, drained
1 can of niblet corn, drained
2 jalapenos, seeded & minced
1 yellow bell pepper, diced
1 medium sweet onion or a bunch of green onions, diced
4-6 T red wine vinegar
juice of 1/2 - 1 whole lime
4-6 T olive oil
1/2 t salt
1/2 t freshly ground black pepper
1/2 t garlic powder
1 t oregano or more to taste
1 1/2 t cumin or more to taste
1/4 c chopped fresh cilantro

Directions:

In a large bowl, mix all ingredients and stir until well combined.
Refrigerate for at least 2 hours before serving.

Serve with tortilla chips, crackers, fritos scoops!


I honestly, fell in love with this recipe!!
I can't believe I've never heard of it before!!!
I'm about to go scarf down some of it right now :o)

Mmmmmm! This sounds amazing. I love the yellow bell pepper addition! I love this with Fritos.

I'm gonna make your recipe for sure. I don't even know what receipe I use. I need to look through my receipe book!
